Evening menus allow guests to sample a variety of dishes from the Silversea Signature Series which combine classic French cooking techniques with the savory spices and sumptuous fare of foreign lands. For lovers of authentic Italian cuisine, the ship's Terrace Cafe is transformed each evening into the alternative dining venue Cucina Italiana featuring delectable dishes from the different regions of Italy. Silversea also offers Light & Healthy Cuisine for guests wishing alternate menu selections for a low fat, low cholesterol and low sodium diet.

White Wine: Viognier, Domaine Cazal Viel, Vin de Pays d'Oc, 1997
Within the space of a few years Viognier has become one of the world's most fashionable white grape varietals. Acknowledging and anticipating these trends, Silversea Cruises have sourced one of the best of the new style aromatic Viogniers. Most of the new plantings of Viognier in France have been in Languedoc-Roussillon. Winemaker Henri Miquel has produced on his estate, just east of Carcassonne, a wine with classic varietal characteristics. - a gently, delicate style of wine with a uniquely apricot perfumed nose and very good length. A wine of some class and distinction.
Red Wine: Domaine de l'Auris, Syrah, Cotes du Roussillon, A.O.C., 1996
The Syrah grape varietal has long been acknowledged as one of the 'noble' grapes, particularly in its spiritual home in the Rhone Valley. It was not until the 1970s however that the grape began to be widely planted elsewhere in France especially in the southwest where the warm climate allows the grape to ripen fully. Domaine de l'Auris, a small estate in Roussillon began making Syrah based wines in the 1980s with technical standards amongst the highest in France. Their very attractive wine showcased at Vinexpo in Bordeaux last year has been acquired recently by Silversea and clearly demonstrates the remarkable potential of the Syrah to produce young, fresh and succulent reds. The wine has great colour, masses of sweet ripe syrah fruit and delicious length.
White Wine: Pinot Bianco, Colli Euganei, D.O.C., Azienda Vignalta, Friuli, 1997
The beautiful, rolling hills of the Colli Euganei lie just a few miles south of the ancient city of Padova. The high altitude and mineral rich volcanic soil of the region has ensured that its potential for winemaking has been recognized for centuries. However in the last few years Vignalta have invested heavily in new state-of-the-art equipment novel winemaking techniques to produce a Pinot Bianco that has been raved about by Italian commentators. Tasting the wine, with its pale lemon colour, one can see why it has attracted so much attention. Ripe peach and passionfruit on the front of the palate vie with the firm acidity to provide the structure and finesse of this very impressive wine.
Red Wine: Chianti Classico, Riserva, D.O.C.G., Il Grigio, Tuscany, 1995
Chianti is without doubt Italy's most well known red wine. However it is in the heartland of Chianti production, in the Classico zone in the hills between Florence and Siena that the finest of these classic wines are produced. No estate has a finer tradition than that of San Felice which dates back to the 12th century. The ancestor of the present owner, Baron Ricasoli, was responsible for laying down the formula for Chianti over a century ago and this 1995 Riserva honours the family traditions of producing Tuscany's finest wines. The wine is beautifully textured with silky tannins and Silversea takes much pleasure in offering it to guests this night
